The Perfect Dinner

Last night I made dinner, I made broccoli casserole (big thumbs up in our family), brown sugar- glazed carrots (sounds disgusting, but is VERY good), rolls (love it) and last, but not least, a salad (We have a salad every night with dinner). It was very pretty and very good. Every one loved it. I liked the carrots and the casserole the best.

Here are the Recipes:

Brown-Sugar Glazed Carrots: Makes 4 servings

1 pound medium carrots,parsnips,or turnips peeled
1 tablespoon butter or margarine
1 tablespoon brown sugar

1. Cut the Carrots or parsnips in half, both langthwise and crosswise.
(Or, cut the turnips into bite-size pieces.)

2. In a medium saucepan cook carrots or parsnips, covered, in a small amount of boiling salted water for 8-10 minutes (10-12 minutes or turnips) or until crisp-tender. Drain; remove from pan.

3. In the same saucepan combine butter, brown-sugar, and a dash of salt. Cook over medium heat until combined. Add carrots, parsnips or turnips. Cook, uncovered, about 2 minutes or until glazed, stirring frequently. Season to taste with black pepper.


Broccoli Casserole:
Oven temp. 350 Time 30-40 min. Serves 10-12

2 small boxes or fresh broccoli. Boil & cook.
Ritz crackers
1 cup mayo
1 can cream of celery
2 eggs
2 cups of cheddar cheese
1 cube butter
(we put boiled chicken in it to.)

Mix up and add broccoli. Put in a greased 9x13 pan, crumble the Ritz crackers spread over pan. Melt butter and pour on top. Put in oven for 30-40min.

Dinner rolls
3/4 cup & 1 Tbsp. watter
3 tablespoon butter or Margarine
3 cups Bread Flour
3 1/2 tablespoons sugar
2 tablespoons Dry milk
1 teaspoon Salt
2 teaspoon Active Dry Yeast

Add to bread machine pan in order. Program Bread Select for dough. You might have to add a little bit of watter to it when in bread machine. Don't add to much! Watch carefully when in bread machine.
When done in bread machine take out and roll into little balls. Put in pan let rise for 15min.
Preheat oven to 350. When done rising put in oven for 15 to 20 minutes. serve warm.

Skittles

We haven't blogged in a long time and we are sorry, but here is a update... A couple of weeks ago was my 12th birthday, for my birthday I had really wanted permission to get a rat. I asked my Mom and Dad and said that I would buy it myself, I just wanted permission to get it. Every time I would ask my Dad would say "yeah right, NO". capital N and capital O. Every time he answered with that I would go to bed feeling very sad. Well my birthday soon came around. The day felt long and sad (especially when my birthday landed on star testing) and I was sure that I was not getting a rat. When it was time for opening gifts everyone was whispering about Mama's and Daddy's git for me. When I had opened all the other gifts Daddy brought out a rat cage. I was really excited, when I saw a little head poke out of it's house. It is a Albino rat and I named it "Skittles" because her eyes are red like little red skittles.
